What style of Kayak and legnth/

I will be guiding 3 to 5 two hour tours a day next summer in Southeast Alaska. The currents are pretty strong, up to about 3-5 miles an hour. I was wondering if I should even consider a kayak with a skeg or just go straight to a rudder system? We travel along with a safety boat in the area so am wondering if tracking would be more important then maneuverability? Also I am 5' 10" and weigh 200 pounds.
